How to: Creamy Potato/Leek Soup with Bacon and Scallions

The last couple of days have been rainy and cold around here so I am craving warm hearty food. I am in love with soups, especially when they are homemade, healthy and filling. I could eat a different type of food every day. I would like to share this awesome Potato/Leek soup I have made the other day. Even my son had some! A little update on his eating habits: He is doing better. This book actually helped me a lot. He eats a slice of bread with my mom’s homemade jam. She sent it a couple of weeks ago and my son loves it! Danke Mama! He loves a bit of grated cheese with it. For lunch he had plain pasta and for dinner, bread and cheese. We are getting there, slowly. So here is the recipe for you to try. Enjoy!

How to: Creamy Potato/Leek Soup with Bacon and Scallions

Ingredients

  • 2 medium leeks
  • 4 tablespoons (60g) of ghee (clarified butter!) You can use oil or butter as well
  • 2 medium shallots chopped
  • 4 gloves garlic, chopped
  • 4 cups (1 liter) vegetable or chicken stock
  • 1 pound (450g) potatoes, cut into small pieces so they are cooked faster
  • 1 cup of milk (240ml)
  • 1 teaspoon salt
  • Pepper
  • 4 scallions
  • 3 slices bacon, cooked

Instructions

  1. You will need: Large soup pot, Stick immersion Blender
  2. Preparation:
  3. Slice the leek vertically, wash off dirt between leaves and slice into small pieces.
  4. Cook:
  5. Melt the ghee/butter in the large pot and once golden, add leeks, shallots and garlic. Cook for about 10 minutes on medium heat.
  6. Add your chicken/vegetable stock and add potatoes. Cook for 30 minutes on medium heat. Remove from heat and let it cool off a bit
  7. Purée soup with stick immersion blender until smooth.
  8. Add milk, salt and pepper.
  9. Pour soup into bowls and garnish with chopped scallions and crumbled bacon

Notes

This is how I prepare the bacon: I slice it in small cubes and heat it up with some oil in a pan. Just so it is nice and crunchy

It is important to slice the potatoes in small pieces. Otherwise it takes a long time until potatoes are cooked!

I will share how I make Ghee myself soon. It is just a healthier way to cook and the food has more flavor!
