How to: Traditional Kanelbullar (Kanielipulla)

FullSizeRender 6

Can you go to Ikea and walk out of the store without buying at least one cinnamon roll? Nope! Exactly! They are so good. The other day I looked through a booklet on cooking courses here in the area and found a Finnish Cooking Class. Yay, I thought. The description of the course: We make traditional Kanelbullar as well! My next thought was that I could also ask my friend Carolina who is originally from Finland to show me how she makes my beloved cinnamon rolls. Long story short; today was the day we met and baked so many that we filled the entire house with this lovely smell of cinnamon/chocolate and dough-heaven. This is just a perfect treat once in a while and goes perfect with a cup of latte. Carolina told me that she used to make those since she was a child. So enjoy and happy baking!

Ingredients

  • 1/2 liter milk
  • 50g Yeast
  • 250g sugar
  • 1 Tablespoon salt
  • 1-2 Tablespoon Cardamom
  • 1 kg flour
  • 2 eggs
  • 200g butter (plus an additional 40g for the dough later!)

Instructions

  1. Preheat oven to 200 degrees
  2. Ingredients should have room temperature (you might need to heat milk and butter quickly in a pot)
  3. Add the sugar, yeast, salt, flour, milk, Cardamom in a large bowl and mix by hand until the dough does not stick to the bowl or your hands anymore
  4. Let dough rest for at least 30 minutes (covered with a clean dish towel and at a warm place)
  5. Now kneel dough again and cut in 2-3 portions
  6. Put some flour on the clean table and roll out dough with a rolling pin until thin. Make sure it does not stick to the table!
  7. Use some of the additional butter (melted or room temperature!) and spread evenly on the dough.
  8. Now sprinkle some sugar, cinnamon or chocolate chips on the dough and roll dough into a sausage shape
  9. Now cut dough into 4 cm long pieces
  10. Use a baking pan and baking sheet and place the Kanellbullar on it
  11. Flatten Kanelbullar by hand slightly
  12. Lightly beat the egg and brush over the buns
  13. Sprinkle some sugar or cinnamon on top
  14. Bake for 20 minutes or until golden brown.

Notes

Keep in mind that the dough needs to rise for 30 minutes!
