How to: Farro Salad

Hey there. It is time to share a great recipe again for this week. These days I am all about salads and healthy eating because my husband lost so much weight and I don’t want to be out of shape next to him ha! Also because I am getting a bit sick so I try to add more vitamins to my diet. So here I want to share an easy recipe that keeps your stomach full for a couple of hours, is a healthy alternative and changes the menu up. You can vary the recipe by adding other ingredients to make it a nice meal. I have a variation of this salad at least twice a week. It also makes a great side dish or quick lunch. When it is getting colder outside a need to eat something warm and a cold salad just keeps me searching for food all day long. (My translation option does not work yet unfortunately but I am trying to fix it- desperately! For my german readers: Farro is Dinkel!) 😉

Ingredients

  • a bag of 10 minute farro (found super cheap at trader joes.)
  • tomatoes
  • cucumber
  • onion
  • parsley
  • feta cheese
  • balsamic dressing
  • chopped almonds
  • salt & pepper to taste

Instructions

  1. Bring farro to a boil and cook for ten minutes. While it's cooking chop your veggies and parsley into small dice. Now drain farro and transfer to a medium sized bowl. Add veggies, dressing and salt & pepper to taste. It is so easy!
  2. You can basically add anything to this salad. I tried it with avocado once, with dried cranberries and it came out awesome. I substituted goat cheese in place of feta cheese. Be creative.

Footnote: You can substitute quinoa for ferro which is really great too.
